Olive My Pickle: Financing Growth Infrastructure
From prior and advisory engagements
About Olive My Pickle
Olive My Pickle is a Jacksonville-based fermented foods company founded by Shai and Charlotte Tzabari in 2010. What started at farmers markets has grown into a national e-commerce brand with 40+ products and a 54,000 square foot production facility.
The Challenge
Despite generating strong monthly profits, Olive My Pickle faced a major capital decision: committing $750K+ to a new production facility. They needed to secure the best lending terms possible and build a payback forecast to evaluate options. Additionally, their books were on cash accounting and needed conversion to GAAP to strengthen their position with lenders.
The Solution
Secured multiple lending options and built a side-by-side comparison framework. Created payback forecasts aligned to their growth timeline and risk tolerance. Mapped out refinancing contingencies for aggressive growth scenarios. Led the transition from cash to GAAP accounting.
